Page 1 of 2 Description: Agar-Agar is a complexe, colloidal polysaccharide, derived from red algae of class Rhodophyceae phyllum. It is mainly produced of Gelidium and Gracilaria seaweed. The main growing areas of the algae are Chile, Indonesia, Morocco and Spain. Agar-Agar dissolves only in warm water and gels when cooled down, beginning at a temperature of 35 to 40° C. It is traded in powder and strip form. Fields of application:
